Well unsb has been talked about a ton, it won't be this easy. Not a bad idea lore-wise though.

I think it'd be nice to have, and if the success rate was low it would put people off doing it on most things of worth

i.e. if you only have a 25% chance of succeeding, you wouldn't risk it on strong items
Would be funny if when you failed an attempt at breaking a soulbind you ended up dying
